Raw snickers

Oh my, these raw snickers are the absolute bomb!

It has everything a snickers should have; delightful sweetness, salty nuts and mouth-watering chocolate.. AND it’s super easy, gluten free, dairy free and sugar free. I saw these raw snickers coming by on my Instagram feed a few days ago, and just had to try them myself! A perfect treat to cuddle up with on the couch together with a good cup of tea, pet and a movie.

 

Ingredients

For the base layer

  • 80 grams of unsalted walnuts
  • 70 grams of unsalted almonds
  • 125 grams of fresh dates
  • 3 tablespoons of melted coconut oil
  • the zest of 1 lemon

 

For the caramel

  • 125 grams of dates
  • 120 ml of coconut milk
  • 3 tablespoons of mixed nut butter (almonds and hazelnuts combined)
  • salt

 

The upper chocolate layer

  • 50 grams of 65% dark chocolate
  • 3 tablespoons of melted coconut oil
  • 2 tablespoons of raw cacao
  • 20 grams of crushed pistachios

 

How to make raw snickers

Easy peasy. Take out your blender, and fill it with the walnuts and almonds. Crush them until they’re in small pieces, then add the fresh dates and coconut oil (probably the dates don’t get mashed at once, just keep the texture pushing down with a spoon – when the blender is turned off of course!). When ingredients for the base layer are cut up into small pieces, you may add the lemon zest. Mix it for a few seconds and then put the mixture in a small tin (I used one of 20×10 cm) and press the layer firmly in the baking tin with a spoon. When the base layer is ready, you may put it in the freezer.

Then, we’re going to make the caramel. Grab your blender again and put in the dates together with the coconut milk, salt and nut butter. Mash everything together until everything is smooth. Take the baking tin from the freezer, and add the caramel layer on the base layer. Then put it back in the freezer.

Last but not least we’ll start with the chocolate layer. Melt the chocolate bar, cacao powder and coconut oil au bain-marie in a pan. When everything is melted, you can turn of the heat and let it cool off for 10 minutes. Take out the baking tin from the freezer again and pour in the chocolate mixture from the pan, divide everything evenly. Sprinkle the crushed pistachios on top and leave it in the freezer for at least 2 hours.

After 2 hours, you can take out the baking tin from the freezer. Carefully cut the huge snickers pie in chunks – notice that the chocolate probably will crack.. but that doesn’t matter. You can store the chunks of snickers for a few days in the fridge!
