Crushed potatoes from the oven – the perfect side dish
Some things in life don’t need to be hard in order to get a fantastic result. Take these crushed potatoes for instance, it may not sound very appealing but it’s an absolutely joy eating them as a side or in a salad. They’re delicious but you don’t need to do a lot about it. I’d recommend having a fine glass of wine while waiting for them to come out of the oven.
What do you need for 2 persons?
- 500 grams of potatoes (preferably a bit small)
- 5 tablespoons of olive oil
- 1 ball of garlic
- optional: some truffle mayonaise
How do you prepare these crushed potatoes from the oven?
Bring a pot filled with water and a pinch of salt to a boil. Cook the potatoes for about 15 minutes.
Preheat the oven to 180 degrees C. Take a large oven dish and splash 3 tablespoons of olive oil in it. Now take out the cloves of garlic from the bowl (with their skins remained) and crush them slightly with a spoon or spatula.
When the potatoes are done cooking, dry them off and add them to the oven dish. Toss the potatoes around and a generous pinch of salt. Roast for 50 minutes in the oven.
After the set amount of time, take out the oven dish and crush the potatoes with a wooden spoon and flatten them into potato patties. Pour the remaining olive oil on top of the crushed potatoes and roast for another 15 minutes.
Serve the crushed potatoes with a dollop of truffle mayonaise.
