Divine chocolate cookies (free from gluten)

Honestly, I shouldn’t share the recipe for these divine chocolate cookies because it’s so good that I could open my own store for it. The cookies are perfectly crunchy on the outside and gooey on the inside, the ultimate combination if you ask me. And yes, perhaps you should double the recipe, because within no-time you’ll run out of them.

 

Ingredients for 10 divine chocolate cookies

  • 60 grams of unsalted butter
  • 90 grams of brown sugar
  • 1 egg yolk
  • 70 grams of gluten free flour
  • ½ teaspoon of baking powder
  • 40 grams of cacao powder
  • a pinch of sea salt
  • 1 tablespoon of milk
  • 50 grams of milk chocolate, coarsely chopped

 

How to prepare these divine cookies

Add the butter, brown sugar and the egg yolk to a big bowl and knead it with your hands or stand mixer. When everything is mixed well, add the flower, baking powder, cacao powder, sea salt and milk and knead into a ball.

Chop the milk chocolate coarsely and add to the dough and distribute the chocolate evenly. Wrap the ball of dough in a sheet of plastic foil and leave in the fridge for an hour.

Preheat the oven to 180 degrees Celsius. Put a sheet of baking paper on a baking tray and start rolling small chocolate balls. Press carefully with your hand on the little dough balls to flatten them a little. Bake the cookies for 14 minutes and let it cool off afterwards for a few minutes.

Eat the divine chocolate cookies when they’re still a bit warm, in this case you still find pieces of melted chocolate in the middle!
