Easy pasta with roasted tomatoes
Easy recipes are a welcome change every now and then, especially when you have now idea to cook anymore. That’s why I developed a recipe for easy pasta with roasted tomatoes; you don’t need a lot of ingredients and the taste is heavenly. Do you prefer some greens to accompany your pasta? Add a handful of rocket or prepare a green salad as a side dish.
What do you need for 2 persons?
- 450 grams of cherry tomatoes (I love the ones with different colours)
- 5 cloves of garlic
- 5 tablespoons of extra virgin olive oil
- 6 slices of pancetta
- 250 grams of (gluten free) tagliatelle
- 1 ball of buffalo mozzarella
- a bunch of fresh basil
- a pinch of chilli flakes
How to prepare this easy pasta with roasted tomatoes?
Preheat the oven to 180 degrees Celsius.
Rinse the cherry tomatoes and put them in a oven dish, also put in the unpeeled garlic cloves. Pour half of the olive oil over the tomatoes and add a pinch of sea salt. Roast for 25 minutes in the oven.
In the meantime, fill a pot with water and boil it. Pan-fry the pancetta and dry it afterwards with a paper towel. When the water is boiling, cook the tagliatelle according to the directions on the package. After cooking, drain the water and add the rest of the olive oil to the pasta.
Divide the pasta between the plates and divide the tomatoes, garlic and pancetta as well. It is the intention that you press the garlic out of his jacket, which gives a lovely and slight sweeter taste. Tear the mozzarella into pieces and divide between the plates. Add a few leaves of basil to each plate and sprinkle some chilli flakes on top.
