Gluten free gingerbread men

Gingerbread men cookies are one of the most festive cookies for Christmas. I wanted to try them for a long time, that’s why I developed a gluten free recipe so I could finally taste them. It’s super fun baking these and decorating them with your kids or by yourself. By adding the ginger powder the cookies get this slightly spicy taste which I thought was delicious! What do you need for 16 cookies?

  • 60 grams unsalted butter
  • 40 grams of brown sugar
  • 40 grams of pancake syrup
  • a pinch of salt
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon cinnamon
  • a pinch of nutmeg
  • a pinch of cardamom
  • 2 teaspoons of baking powder
  • 135 grams of gluten free flour + a bit extra

 

How to make these gluten free gingerbread men?

Take the butter out of the fridge and warm it to room temperature.

Mix the butter with the brown sugar and syrup until a creamy batter. Then add the salt, ginger powder, cinnamon, nutmeg and cardamom. Mix again.

After this add the baking powder and the gluten free flour, mix altogether. The batter will be pretty sticky. Flatten the dough and wrap it in plastic foil, then put the dough in the fridge for 2 hours. Otherwise the cookies will melt too much in the oven and the shape will vanish.

After 2 hours preheat the oven to 175 degrees C. Put a sheet of parchment paper on an oven tray.

Dust your cutting board with flour en roll out the dough with a pin, make sure the dough is about 0.75 cm high. Use your mold to cut out the gingerbread men and put them on the parchment paper.

Slide the oven tray into the oven and bake them for 11 minutes, let them cool off after. Optionally you can choose to decorate the gingerbread men with a glaze.
