Gluten free lemon bars

One of my favorite treat is the French tarte au citron: a pie with a yummy crust and a creamy layer of lemon curd. Not quite low in carbs but who cares? The disadvantage of making this tarte au citron is that the French want you to blind bake the crust, which I think is annoying. Therefor I made an easier recipe: the gluten free lemon bars. Every bite you take, tastes a little bit of summer!

 

What do you need for 12 pieces?

For the crust

  • 80 grams of sugar
  • 125 grams of unsalted butter
  • a pinch of salt
  • 1/2 teaspoon of vanilla extract
  • 150 grams of gluten free flour

 

For the lemon curd

  • 3 eggs
  • 130 grams of sugar
  • 2 lemons
  • 125 ml of cream

 

How do you make these gluten free lemon bars?

Preheat the oven to 175 degrees C. Take a square baking tin (the easiest option) or oven dish and put a sheet of parchment paper on the bottom.

For the crust mix the sugar with the butter, a pinch of salt and the vanilla extract until a creamy mixture arises. Then start adding the gluten free flour bit for bit. After a while you’ll be able to make a nice ball of dough. You can choose to roll this out with a rolling pin or to spread it out on the bottom of the baking tin with your hands. Bake for 20 minutes in the oven.

In the meantime, you can start with making the lemon curd for the filling. Whisk the eggs and sugar till white and creamy. Grate the lemons and juice them, add the grated lemon peel and lemon juice to the eggs and sugar. Whisk. Then add the cream and whisk a bit more.

When the crust is done baking, take it out of the oven. Because the crust is still very soft, pour the lemon curd very carefully on top by positioning the bowl just a bit above the crust. Otherwise the crust will break. Now bake the lemon bars for another 25 minutes in the oven, check every now and then if the lemon bars don’t become to brown. In case the lemon bars colour only on one side, position the baking tin differently to create an even colour.

Let the gluten free lemon bars cool off and then carefully cut with a knife around the sides of the baking tin. You can serve the lemon bars optionally with some powdered sugar.
