How to make your own baba ganoush?

A few days ago I made some sandwiches with baba ganoush and realized that I didn’t even have a recipe for this on my website. Because of that, I started to experiment with the right proportions with this recipe for baba ganoush as result. The spread is a bit spicy and goes very well with sandwiches or little toasts. I will add the recipe for the sandwiches with baba ganoush soon!

For +/- 4 portions

  • 2 aubergines
  • 1 teaspoon of tahini
  • the juice of 1/2 lemon
  • a pinch of cumin powder
  • 2 tablespoons of olive oil
  • 2 cloves of garlic
  • peper & salt

 

How to make baba ganoush

Preheat the oven to 200 degrees C. Grease the aubergines with olive oil and pierce the skin with your fork a few times, add the aubergines to an oven dish. Slide the oven dish in the oven for 40 minutes.

When the aubergines are done cooking, take them out of the oven and let them cool off a bit before continuing. Carefully take off the skin of the aubergines and use the pulp, chop it coarsely. Add the chopped aubergines to a big plastic cup (one which is easily accessible with your hand mixer).

Add the tahini, the juice of half a lemon, a pinch of cumin powder, the olive oil and cloves of garlic. Mix the ingredients by using your hand mixer until smooth. Add salt and pepper to taste.
