Massaman curry with lamb
One of my favorite curries is the massaman curry because it has the perfect combination of spicy and sweetness. Before I have tried some vegetarian version or with chicken, however this time I tried the classic variation: massaman curry with lamb. Let the lamb simmer for about 2 hours and the result is a real feel good meal.
What do you need for 2 persons?
- 2 shallots
- 1 clove of garlic
- 70 grams of massaman curry paste
- 400 grams of lamb, diced
- 300 ml of coconut milk
- a pinch of cinnamon
- 180 grams of new potatoes
- 100 grams of sugar snaps
- 1 red paprika
- a bunch of coriander
How to prepare massaman curry with lamb?
Dice the shallots and cook them in a deep pan with a thick base, then add the finely chopped clove of garlic. Add the curry paste and stir for a minute. Add the diced lamb and wait until the meat is scorched on the outside, then add 200 ml of coconut milk, 200 ml of water and some cinnamon, stir. Turn the heat low and put the lid on the pan, let it simmer for 2 hours. Stir every 20 minutes to prevent burning.
In the meanwhile, chop the new potatoes in quarters, clean the sugar snaps and remove the ends, chop the paprika into fine pieces.
After 2 hours of cooking add the new potatoes to the pan. Let it cook for 15 minutes on low fire with the lid on. After, add the sugar snaps and paprika, also add 100 ml of coconut milk and stir. Cook for another 15 minutes.
Serve the massaman curry with rice and some coriander.
