Granola with quinoa
I love making huge stashes of granola, and always want to try new ingredients. This time I added quinoa, to make the granola even richer in nutrients! Also I added lots of cinnamon and cacao to create a pre-winter feeling! Succes guaranteed for those cold mornings.
Let’s get started!
- 450 grams of oat flakes (gluten free)
- 200 grams uncooked quinoa
- 300 grams of mixed nuts (unsalted)
- 100 grams of honey
- 1 tablespoon of cinnamon
- 2 tablespoons of cacao
- a handful of chia seeds
- 50 grams of sunflower seeds
- 2 tablespoons of coconut oil
- 2 tablespoons of ginger sirup
- 100 grams of raisins
- 10 dates
How to prepare the granola
Preheat the oven at 180 degrees celcius. Take out the griddle and cover it with baking paper.
Crush all the nuts in your kitchen machine and lay them on the baking paper together with the oat flakes, quinoa, sunflower seeds and chia seeds. Pour the cacao and cinnamon powder on the granola and mix everything together.
Then, put a cooking pot on the stove (at low heat) and add the honey, coconut oil and ginger syrup to the pot. When the mixture is becoming liquid like water, you can add the mixture to the granola.
It’s important that all the granola sticks together by scrambling the honey mixture through the granola!
Put it in the oven for 20 minutes, yet make sure to stir the granola for a bit after 10 minutes. Otherwise it burns.
In the meantime, cut the dates to small pieces.
When the granola is baked, you can add the dates together with the raisins.
