Healthy banana bread

Do you also love the smell of a delicious cake or pie baking in your oven? For me it’s the ultimate weekend feeling! The cold rain slamming against the windows, a mug of tea in your hands and the waiting for the cake to be ready and on your plate.
This time I tried the healthy version of banana bread. I added some different sorts of spices for a more intense taste, hope you’ll love it like I did!
Ingredients for 8 servings
- 4 bananas (1 of them is for the topping)
- 80 grams of dates
- 3 eggs
- 1 tablespoon of ginger syrup
- 1 tablespoon of cinnamon
- a bit of cardamom
- a bit of nutmeg
- a bit of salt
- orange zest from 1 orange
- 190 grams of rice flour
- 60 grams of corn flour
- 2 teaspoons of baking powder
- 60 grams of unsalted pecan nuts
How to prepare the banana bread
Preheat the oven to 180 degrees C. Take a medium bowl and add the 3 peeled bananas and the dates.
Blend the bananas and dates until the dates are chopped up into small pieces. Then add the eggs one for one and stir it with your mixer. Then add nutmeg, cinnamon, cardamom, salt, orange zest and ginger syrup and again stir everything together.
Carefully add the different sorts of flour together with the baking powder and stir.
Chop the pecan nuts into small pieces and fold them carefully in the mixture until they are evenly distributed. Prepare the baking tin with a bit of butter of the sides and pour the cake butter in it.
Put the baking tin in the oven for 40 minutes.
When the timer has gone off, make sure the cake is well cooked by inserting a knife. If the knife comes out clean, the cake is ready. Let it cool off for a bit and then try not to eat it all at once!!
