Mini chocolate fudge cake (gluten free)
Especially for Valentine’s Day (haha, not!) I made this mini chocolate fudge cake, which is perfect to eat with the two of you. Or just by yourself, which is pretty fine also. The mini chocolate fudge cake is nice, fudgy and gooey from the inside, ideal to escape with to the couch.
Recipe for a mini cake (2-4 servings, depending on how eager you are on sharing)
- 80 grams of unsalted butter
- 90 grams of pure chocolate (+70% cacao)
- 1,5 tablespoon of cacao powder
- 40 ml milk
- 2 eggs
- 80 grams of sugar
- 50 grams of gluten free flour
- a pinch of sea salt
How to make the mini chocolate fudge cake?
Preheat the oven to 160 degrees Celsius. Use a small baking tin (12 cm) and put a sheet of parchment paper on the bottom, grease the sides slightly with a knob of butter.
Melt the butter in a sauce pan with the chocolate, cacao powder and milk. Let it cool for a bit when everything has melted together.
Meanwhile whisk the eggs and sugar for 4 minutes until there is a white and creamy mixture. Add the chocolate carefully and mix for a little bit until smooth.
At last add the flour and salt, mix this super quick to keep the batter light and fluffy. Pour the batter in the baking tin and bake for 30 minutes in the oven. Afterwards cool down completely before removing it carefully from the tin. If everything turned out alright, the inside should be lovely and fudgy!
