Ricotta & pea fritters

When you first look at them, they might seem like silly, green pancakes to you. But they’re not. These are savory ricotta & pea fritters; which basically describes itself as a soft and cheesy cookie with fresh flavors like mint and lemon. Sounds pretty weird in writing, but you should just try them! Serve the fritters with a green salad of spicy tomato sauce.

 

What do you need for 10 fritters?

  • 100 grams of frozen peas
  • 15 grams of mint
  • 400 grams of ricotta
  • 1 egg
  • 50 grams of Pecorino
  • zest of 1 lemon
  • 3 tablespoons of gluten free flour
  • pepper and salt

 

How to make these ricotta & pea fritters?

Take the peas from the freezers and pour them in a bowl. Defrost them and use the microwave (when you don’t have much time), cook for 50 seconds on 1000 watt. After, pour the peas into a plastic mug and add the fresh mint. Use a hand mixer to pulp the peas and mint together.

Add ricotta and one egg to a big bowl and mix it together. Grate the pecorino and the lemon and add both the pecorino and zest to the bowl, then add some gluten free flour and pepper and salt. Mix again. Then add the mashed peas and mint to the ricotta mixture and mix together.

Take out a frying pan and add 1 tablespoon of oil to the pan. When the oil is quite hot, add 3 tablespoons of the ricotta batter to the frying pan – but separated from each other as these will be 3 fritters. When the bottom of the fritters start to color slightly brown (that’s about after 1 – 2 minutes) carefully flip the fritters using a spatula. Wait until the other side of the fritter is also colored and then take them out. Start the process all over again until the batter is finished.
